About the Author
Pamela Goyan Kittler has an MS in Nutritional Science from San Jose State University with an emphasis in nutrition education and currently works as a cultural nutritionist. She is the author of three undergraduate textbooks, has published numerous articles in professional journals and newsletters, and frequently presents lectures and workshops on topics of food and culture.

Dr. Sucher received her bachelor's and master's degrees from the University of California and her ScD from Boston University Medical Center in Nutritional Science. She recently retired from San Jose State University, where she taught medical nutrition therapy and was the dietetic internship director for 20 years. in addition to her research interest in nutrition therapy, she is also a recognized authority on how diet, health, and disease are affected by culture/ethnicity and religion. Dr. Sucher has published newsletters, numerous articles, and textbooks on this subject. She is also the coauthor of Nutrition Therapy and Pathophysiology, 3e (Cengage Learning 2016) and Food and Culture, 6e (Cengage Learning 2012).

Marcia Nahikian Nelms is currently a professor of clinical health and rehabilitation sciences and director of the dietetic internship in the Division of Medical Dietetics-College of Medicine at Ohio State University and a registered dietician. She has practiced as a dietician and public health nutritionist for over 25 years. Her clinical expertise centers on the development and practice of evidence-based nutrition therapy for a variety of conditions including diabetes, gastrointestinal diseases, and hematology-oncology for both pediatric and adult populations, as well as the development of alternative teaching environments for students receiving their clinical training. She is the lead author of Nutrition Therapy and Pathophysiology (2016) and Medical Nutrition Therapy: A Case Study Approach (2014), both published by Cengage Learning. In addition, she has contributed to the Academy of Nutrition and Dietetics Nutrition Care Manual sections on gastrointestinal disorders and is the author of numerous peer-reviewed journal articles and chapters for other texts. Dr. Nahikian Nelms has received the Governor's Award for Outstanding Teaching for the State of Missouri, the award for Outstanding Dietetic Educator in Missouri and Ohio, and the PRIDE award from Southeast Missouri State University in recognition of her teaching.

I rented the kindle e-book and selected the date which ...

I rented the kindle e-book and selected the date which I wanted the rental to end August 5th (which was the last day of my class). Everything went smoothly but today July 13th three weeks before class ends suddenly my rental was expired. Wtf. Weird. So I went back onto amazon to rent it again and now it wont let me select my own return date and instead it is saying the rental has to be until October and will cost me another $36.00. So basically I selected the date my class ended for the rental expiration date and suddenly it changed. And now it has to be rented until October just so that they can rack up the price....shady..

Food and Culture is intended as a textbook for the formation
and development of dietitians and nutritionists, food service
professionals and other health professionals who must deal
with the plethora of ethnic groups and their cultures found in
healthcare systems and the delivery of healthcare services.
The reviewer has owned several editions of this book and
watched it grow in cultural reach and depth, as well as in its
ability to satisfy both the needs for understanding of how
peoples relate to their diet. It is also a satisfying excursion for
the curious interculturalist and nonprofessional reader into
the variety, history and meaning of foodstuffs, their
preparation and their role in the cultural discourse of each
ethnic group.

The book has improved in each edition in its layout and graphics. The
volume I have a hand is described as an “international edition,” aimed at students and faculty
outside of the United States and Canada. However, the focus and framework are still very much
North American, organized around the wide variety of ethnic populations distributed there. On
the other hand, these populations do represent just about every corner of the earth, enabling
the book to provide background, information, and insight into the meaning and use of food
among peoples of the world and enabling it to be of service with some few cautions beyond the
North American context of its origin.

Critical to the original purpose of the book, of course, is helping the professional user enhance
his or her understanding as to how the dietary preferences and habits of members of diverse
groups may be problematic, neutral or helpful to certain health conditions. Insight is provided,
but mostly in the form of suggested further inquiry, given that patients may differ widely in
their food behaviors, personal health conditions and genetic endowment. Given specific
discussions of the potential relationship of food to health or pathology, the book is still never so
laden with medical terminology as to provide an obstacle to the average reader.

An additional feature to this latest addition is the regular appearance in its pages of “discussion
starters” intended to help learners reflect upon, digest, and apply the information they are
learning. These are of the nature of class assignments requiring students to take the
information they have been exposed to, digest and discuss it, and then explore how this might
be applied in the healthcare context in which they are or may be engaged. Despite the plethora
of information about various cultures, their food practices philosophies, etc., it would seem to
me that at least some of these discussions would run the risk of leading to ethnocentric
decision-making and stereotypes about various groups. In an age where the likely users of this
textbook will have ample access to the Internet, social networking, blogging, and the like, it
would seem appropriate from a pedagogical point of view to encourage activities beyond the
learning group, particularly if the learning group did not have live representatives of the culture
or cultures under discussion.

The wealth of material found in these pages, despite being well organized, is overwhelming,
making it not just a textbook, but a reference work, as well as a reader begging to be
serendipitously consulted out of curiosity. Using the meal as a metaphor for digesting the book,
I realize that it needs, at least for those for whom it is not a textbook, a disciplined approach, if
it is not to result in a massive crise de foie--the French term for the results of overindulgence. It
is easy to overindulge, since the language of the book is simple, direct and understandable.
Sample menus are given for the major cultures discussed. From my personal perspective as a
“foodie,” of course,” I am still disappointed not to find recipes for all of the items mentioned, or
a list of representative restaurants in my area, but that is obviously my own inappropriate
expectation. Besides, with the plethora of information about the uses and ingredients in the
environments from which the various ethnicities emerged, I can and you can Google the rest if
so tempted.

Chapter 3 is explicitly about intercultural communication. It makes the requisite genuflections
to the iceberg model, high and low context distinctions, and the Hofstedian dimensions. More
relevant is the discussion in this chapter touching on verbal and nonverbal communication,
proxemics, and the like, which raises caution and provides some scant advice to the healthcare
professional who will be dealing face-to-face with people of widely differing backgrounds.

Much more useful are the communication insights both explicit and implicit in the discussions
found under the rubric “Consulting” in the culture specific chapters of the book, where full
treatment is given to the ethnic groupings and individual ethnicities whose food habits are
discussed in detail. This consulting advice is certainly important for the health care professional,
since it is one thing to have a cognitive awareness of foodstuffs and their meaning and use
inside of a culture, but it is quite another effectively relate these issues in face-to-face
engagement to the health habits of the likely stressed individuals whom they serve, as well as
to their concerned families who will inevitably be involved in the care and nutrition of the
patients. Food and social behavior as well as social structure are intimately entwined. Relating
cannot simply be about diagnostics and information giving.

The authors do a fine job of distinguishing differences within cultures and degrees of
assimilation and acculturation to the US context in which the representatives of the various
ethnicities they discuss are found. In some cases this has to do with the actual date or era of
the immigrant groups arrival on US shores, remembering that there have been different waves
of immigration from various countries. These may involve different classes of people, different
age groups, and different regions. I personally witnessed differences and misunderstandings
among members of the Hungarian community in the Midwest, when the more rural and
working-class immigrants of the early 20th century and their descendants were joined by those,
largely urban professionals, who fled the country after the uprising against Communist rule in
1956. Values, lifestyle and diet all came into question.

Two of the major health risks characteristic of the USA and rapidly under exportation to ethnic
groups within the country and beyond, are obesity and addiction. The authors repeatedly note
that ethnic groups, particularly those who came from lower class are more impoverished
situations in their homeland, once they have successfully established themselves in North
America, and begun to benefit by the abundance of foodstuffs available to them, can easily fall
prey to the health hazards of obesity, simply from overindulgence in their accustomed diets.
Culture is shaped by environment; so too the culture of food. And so, change of environment is
unsettling. We might even surmise that part of the proclivity to obesity in the United States in
general may have to do with a certain culinary anomie in a population, which consists of
displaced native peoples and succeeding waves of immigrant groups in a nation further
characterized by high mobility. Despite near obsession in many places in the USA with eating
well and eating naturally, might we not expect that the upset of traditional patterns of
consumption plays some role in the individual's level of satisfaction and satiety, leading to
overeating and attempts to fill a void of taste, identity or other need in search of satisfaction?

The vastness of the North American land mass and its diverse landscapes and ecologies, not
surprisingly give rise to regional diets and cuisines and a need on the part of the authors to
discuss them. These may or may not be overlaid with the preferences of the ethnicities that
settled in these regions. Rather, we are likely to see a kind of hybridity of cuisine while each
area is still distinguishable from the others. These differences are also of importance to
nutritionists and dietitians and other healthcare workers, particularly given the mobility of US
Americans, which we have already noted.

In sum, Food and Culture is an excellent and necessary piece of work, appropriately updated, an
important item for corporate as well as academic diversity libraries.

a brilliant one-of-a-kind approach to the genre

I used the 2nd edition of this book to teach Academic Writing in a Continuing ed. ESL program to mostly Phd. candidates at the University of Massachusetts, as well as to Phd. students and professors at the University of Sao Paulo, Brazil. I found this to be an outstanding book for graduate students needing to learn the organizational patterns of IMRD research papers as well as rhetorical strategies commonly employed in such papers. Since these conventions are not typically taught in the ESL courses in the countries my students came from, they typically found the text quite informative. Having revised the English of over 1,400 research papers written by non-native speakers of English, I find this book to be highly relevant for anyone learning the basics of writing research papers. For example, the three moves of the introduction: 1. Begin by defining the larger general territory or context from which the topic of your study develops. 2. Point out a gap or lack of knowledge that exists in the literature about the topic of your study. 3. Indicate how your study fills this gap. Feaks and Swales elaborate on these 3 moves, and illustrate how to structure the introduction according to these three moves. The authors provide a lucid and simple set of points for students, which are quite reassuring to junior authors writing their first paper.

While there are countless guidebooks on writing research papers, the authors address the unique needs of English Language Learners. It is a fine book to use alone, in small groups, or with large classes. One interesting feature of this book is that it does not simply prescribe rules. It is a far more nuanced approach to the topic. The authors cite various studies of applied linguistics that report not on what they think authors should be doing in their writing but instead on what actual authors do in various fields. This book relies heavily on the research of the field of Applied Linguistics, specifically genre analysis. One of the main ideas is develop students awareness of how researchers in their particular field write papers, considering their particular word choice, phrases, and strategies. The idea is to empower students and help them present themselves as knowledgeable and competent members of their particular research discourse community. This is a book that challenges students to think about how they wish to present their research; it does not provide a simplistic lists of dos and don'ts; it encourages thoughtful self-reflection. This feature sets it apart from common writing guidebooks.

The the detailed review of issues related to writing the title, abstract, introduction, material and methods, results, and discussion, the lesson on hedging, citation patterns, the formulaic language used in various parts of a paper, the mixing of complex grammar with certain rhetorical strategies of research papers, all make this book a brilliant one-of-a-kind approach to the genre. The third edition, which covers more examples from natural and physical sciences, seems to have only greatly improved this superb book. Personally, after teaching ELL for 8 years in public schools, I was inspired by this book to delve deeper into English for Academic Purposes in higher education and research. I would highly recommend this book for any ELL graduate student aiming to improve their ability to write research papers.

Excellent text, especially for Ph.D students

I've been using the 2nd edition of this Academic Writing for Graduate Students in a writing class for international graduate students for several years. I liked it a lot, but this edition is even better. It's considerably longer than the last edition, contains example texts and exercises from a greater variety of fields, and works well both for in-class activities and individual study. One improvement over the last edition is the emphasis on "old to new" informational flow to improve clarity and coherence. Also, the skeletal sentences throughout the text (typical sentence structures found in academic writing that students can adapt for use in their own writing) are especially useful for students whose first language is not English.

I should add, though, that this edition is probably more appropriate for Ph.D. students and visiting scholars than it is for master's students. I used it in a class composed almost entirely of doctoral students and international faculty members, and they reported that they learned a lot from the text. One of my colleagues, however, used it in a class composed mainly of master's students, and he found it less effective. In fact, he preferred the previous edition and thought that the 3rd edition was inappropriate for most of the students in his class. I prefer the 3rd edition and would recommend it to any doctoral students who want to master the genre of academic writing. I should also add that the commentary that can be purchased separately from the main text has also been significantly improved over the previous edition. The 2nd edition commentary was not worth buying, but the 3rd edition is much more useful, especially for students who are buying Academic Writing for Graduate students for individual study. Finally, at less than $30, this text is very good value for money.

Very insightful compilation of the myriad tasks (exercises) that compose the path to successful completion of graduate work--helpful for most grads with English as first or second language. Brief explanations of learning objectives followed by generous use of example texts and penetrating questions for students. Accompanying instructor's guide provides broad range of answer choices for quick prep. I've adapted sections for a 6-part workshop series that many students find more convenient and less demanding than an elective course. Note: Cormell grad writing site has link to free download of supportive reference by Keith Hjortshoj "Writing From A to B: A Guide to Completing the Dissertation Phase of Doctoral Studies" (2010). Also Stanford's Hume Center has link to free download of template package by Sohol Lee & Julia Bleakney "Writing Research Statements for Graduate Student Fellowship and Grant Proposals: Workshop Writing Kit" (c.2010). I bought this book for an introduction to engineering class - I thought this would be a "blow-off" class, but it was not. Independent of the class however, this book is great!
I dropped out of highschool, got my GED, went to community college, dropped out of that, and now 8 years later am going to university; this time, I am committed. Whether you are a drop-out or a high-school graduate, this book will teach you new things. Not only new things, but very important things. If you want to succeed in school, not just barely make it, this book will be incredibly helpful if you take it to heart.

Bottom line: I plan on keeping this book long after the class is done. Good luck and stay motivated!

I have not read the entire book, but have read about 20 - 30 pages and found that the book is just what I wanted. I have three sons that are all studying Physics and plan to move into the Engineering Field in Graduate School. This book will give them lots of useful information.

About the Author

Joe F. Hair, Jr. is Professor of Marketing, DBA Director and the Cleverdon Chair of Business in the Mitchell College of Business, University of South Alabama. He previously was Senior Scholar, DBA Program, Coles College of Business, Kennesaw State University, held the Copeland Endowed Chair of Entrepreneurship and was Director, Entrepreneurship Institute, Ourso College of Business Administration, Louisiana State University. He has authored over 60 books, including Multivariate Data Analysis (7th edition, 2010) (cited 140,000+ times), MKTG (10th  edition, 2016), Essentials of Business Research Methods (2016), and Essentials of Marketing Research (4th edition, 2017). He also has published numerous articles in scholarly journals and was recognized as the Academy of Marketing Science Marketing Educator of the year. A popular guest speaker, Professor Hair often presents seminars on research techniques, multivariate data analysis, and marketing issues for organizations in Europe, Australia, China, India, and South America.

Dr. G. Tomas M. Hult is Professor and Byington Endowed Chair in International Business and Director of the International Business Center in the Eli Broad College of Business at Michigan State University. He has been Executive Director of the Academy of International Business and President of the AIB Foundation since 2004, was Editor-in-Chief of the Journal of the Academy of Marketing Science from 2009 to 2015, and has been on the U.S. Department of Commerce’s District Export Council since 2012. Professor Hult is one of some 80 elected Fellows of the Academy of International Business. He is one of the world’s leading authorities in global strategy, with a particular focus on topics dealing with the intersection of global strategy and supply chain management. Christian M. Ringle is a Chaired Professor of Management at the Hamburg University of Technology (Germany) and Conjoint Professor at the Faculty of Business Law at the University of Newcastle (Australia). Haripriya Narasimhan is assistant professor of social anthropology and sociology at the Indian Institute of Technology Hyderabad.

Inadequate Study

This is well researched book that a contains lot of information on Tamil brahmans. It covers the history of the social transformation of the community over the last century and a half. The authors’ efforts are to be appreciated for compiling so much information for today’s students of social studies. However their analyses and conclusions often missed the target.

The social scientists and works cited in the book are mostly Western, either European or American. As such it may not appear to present a problem but they are outsiders to the tradition. Outsiders can only write about the visible markers on the ground but cannot gain the insight of underlying causes or comprehend the soul of an alien society. It is the understanding of the soul of the community that will help to understand how it will further transform in the future. One of the authors is indeed an insider but her approach to the study is Western, and I think that she missed the target of understanding the soul of the community.

Indian social divisions are more complex that can be explained by one word “caste” as done by the authors and most Western social scientists. The division is composed of jati, varna, gotra, kula and more. Very few explicitly recognize that varna is an abstract, fluid and controversial hierarchical concept while jati is a reality for everyone because he/she is classified into a jati which is recorded in birth certificates, school and college records and other documents. Unfortunately the authors stuck to one word “caste” and failed to enlighten the readers of the distinction.
There is a comment that M. N. Srinivas’ work was somehow tainted because of his own brahman background (p 24). Nobody’s mind, including that of a Western scholar, is a blank slate when beginning to study Indian society. Every child in the West is taught in schools that Hinduism and Indian society being backward, superstitious, irrational, polytheistic, etc. It is naive to expect that the Western scholar erases such accumulated biases when undertaking the study of Indian society. Further, such diminishing of Srinivas’s work because of his origins amounts to cultural imperialism as it denies the agency to Indians to define who they are.

Authors acknowledge that the colonial rule consolidated the “caste system” (p 31, 56) but failed to elaborate on it. The purpose of the census exercise by the colonial government was to classify and rank the population on a civilizational scale under the racial theories and the ideas of Social Darwinism prevalent in Europe in the nineteenth century. The exercise reinforced the idea of jati identity among the indigenous population and in the process gave renewed life to the varna hierarchical ranking and thereby divided the society. The division added to the sense of security to the colonial authority which had experienced the nightmare of the rebellion of 1857.

Living in segregated areas of town (agraharam) is not unique to Brahman community. Most villages and small towns in Tamilnadu had segregated housing by jati groups among the non-brahmans as well, the degree of segregation dependent on the economic status of the groups. How much of this segregation was under the approval and encouragement of the authority is unknown and it needs to be studied further. Unfortunately the authors overlooked this and thereby implied that the segregated living was a unique brahman practice.

“the colonial government’s bureaucratic and legal system, which in theory, though not in practice, were organized by new principles of rationality and equity” (p217). Rationality is in the judgment of the observer but the equity can be measured. The strength of the colonial government depended on the division of the society and not equity. Any sense of equity among the ruled was perceived as a threat. The exercise of census was to reinforce and codify the division in ranks and categories. The colonial government early on had categorized brahmans as the “brown English men”, an idea floated by Macaulay, and ranked them at the top of the varna ranking ladder and facilitated their English education earlier than the other jatis. It explains their large presence in the government bureaucracy in the nineteenth century. This did not happen by accident but by design of the colonial government. The authors missed this in their scholarship and the reader is left with an incomplete history.

The book documents the social transformation over time but missed to focus on many forces that drove the transformation.

Very interesting research on the early urbanisation of the tamil brahmins and how that has played out over the last 150 years, including their migration to other cities in India and outside. I would have preferred a tighter editing and a slimmer book but overall a good eye opening read.

a well researched work and gives a reasonably accurate picture of a community which is spreading all over the world due pressures in the home country.a good example of how adversity makes you adventurous.
